A Delicious Filipino Recipe
Filipino cuisine is known for its rich flavors and hearty dishes that bring comfort and satisfaction to every meal. One beloved Filipino recipe that embodies these qualities is Pork Giniling Kaldereta.
Pork Giniling Kaldereta is a simple yet delicious dish that you can make for lunch or dinner. If you like pork giniling and are a fan of kaldereta, this recipe is perfect for you. This dish is a crossover between these two Filipino favorites. It can be enjoyed with plain white rice or with pandesal.
I just had this dish for dinner tonight and really enjoyed it. I plan to save the leftovers for tomorrow and am thinking of making meat rolls with this as the filling.
You’ll notice that I didn’t use potatoes in this recipe. It’s a personal preference, but you can certainly add them if you like. One large baking potato, sliced into cubes, is enough. Add it along with the carrots if you decide to include it.
Follow the recipe below, and you should be on the right track. By the way, I used a piece of pork cube to enhance the flavor. If you don’t have this ingredient, you can use a beef cube, beef powder, or beef broth. If using beef broth, add ½ cup of broth and omit the water.
Ingredients
- 1 lb ground pork
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 carrot, diced
- 1 cup green peas
- 1 piece pork cube (or beef cube, beef powder, or ½ cup beef broth)
- 1 small can liver spread
- 1 cup tomato sauce
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 teaspoon sugar
- 3 tablespoons cooking oil
- 1 cup water (omit if using beef broth)
- Salt and ground black pepper to taste
Instructions
1. Prepare the Ingredients
- Heat oil in a pan over medium heat.
- Sauté the garlic until golden brown, then add the onions and cook until they soften.
2. Cook the Pork
- Add the ground pork to the pan. Cook until it turns light brown, breaking it up into smaller pieces as it cooks.
- Add the pork cube (or beef cube/powder). Stir to mix well with the pork.
3. Add the Vegetables
- Add the diced carrots and cook for 2-3 minutes.
- Add the red and green bell peppers and cook for another 2 minutes.
- Stir in the green peas.
4. Add the Flavors
- Pour in the tomato sauce, soy sauce, and Worcestershire sauce. Mix well.
- Add the liver spread and stir until it’s fully incorporated.
- Add the water (or beef broth if using). Stir to combine.
5. Simmer and Season
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-30 minutes, or until the pork and vegetables are tender.
- Season with sugar, salt, and ground black pepper to taste.
