Ginisang Upo with Sardinas is a simple dish made of sliced bottle gourd or opo squash and canned sardines in tomato sauce. I like my dish a little spicy, so I have used spicy canned sardines. This simple and cheap dish gets prepared quickly. It takes less than 20 minutes to prepare and cook and it can feed 4 people.
It is better to eat it with rice. This can be eaten for breakfast, lunch, or dinner. This depends on your choice. Apart from these, other vegetables can also be used. Spices, bitter gourd or ampalaya or even sayote pair well with sardines.

Ingredients:
- 1 medium-sized upo (bottle gourd), peeled and thinly sliced
- 1 can of sardines in tomato sauce
- 2 cloves of garlic, minced
- 1 small onion, chopped
- 1 medium-sized tomato, chopped
- 1 cup of water or chicken broth
- Salt and pepper to taste
- Cooking oil
- Instructions:
- In a pan, heat cooking oil over medium heat.
- Saute garlic until fragrant, then add onions and tomatoes. Cook until onions are translucent.
- Add the sliced upo to the pan and stir to combine with the other ingredients.
- Pour in the water or chicken broth and let it simmer until the upo is tender.
- Add the canned sardines with tomato sauce into the pan. Break up the sardines gently with a spoon and mix well.
- Cook for a few more minutes until everything is heated through.
- Season with salt and pepper according to your taste.
- Serve hot with rice.
