Filipino Style Escabeche.
What kind of food do you usually like to eat? Do you like a little extra savoury, or maybe you want a little spice in the dish with a little sourness? Or maybe you like something sweet, which is common in Filipino cuisine. For some cooks, all this is little. If you are looking for a recipe that will tick all these boxes and give you a flavorful and tasty meal, then the best Filipino Style Escabeche recipe should be one of your top choices!
What is Escabeche?
This appetizing recipe is famous for its sweet and sour maze which results from the mix of seasonings and other ingredients. Escabeche, often in its forms, uses vinegar to give the classic sour taste that we use to coat fish or meat in our sauces. But what makes the Filipino version different? For starters, it uses a local favorite to add pleasant sweet and sourness to the maze—banana ketchup! The Pinoy rendition is also famous for its use of vibrant, flavorful bell peppers. It gives a good crunch and is deliciously juicy. This is mixed with our thick, orange sauce. Is this attracting your attention? So let’s see the steps to make this simple escabeche recipe!
How to make Filipino Style Escabeche:
Since we are using fish for our recipe, we must prepare this ingredient and ensure proper flavor. Take 1 bara of fish and then cut it into serving pieces. After that, apply salt on each piece of fish, which will require 2 tablespoons. Now just wait for 2 minutes so that the flavor gets absorbed.
For now, we can prepare to fry. Take your ¾ cup cooking oil and then add it to your pan. Let it heat up, and when it does, add your first fish slices. Then fry each side of the fish until it turns golden brown. Take out the cooked fish from the pan and place it on a serving plate of your choice. And then it’s time to make the sauce for our fish escabeche recipe!
Method of making sauce:
Take 2 tablespoons oil and heat it in the pan. Then 3 pieces were cut into pieces and the onions were cut into 1 plate. Now mix all these together and sauté them and then wait till the onions become soft. After that, we will increase the consistency of the maze by adding 4 tablespoons banana ketchup, 3 tablespoons white vinegar, 3 tablespoons white sugar, and a splash of 1 cup water. Mix all these together and let the mixture boil.
And then you can get 1 red bell pepper and 1 green bell pepper, and 1 carrot which you have julienned. Let it cook in this manner for 3 minutes, and then add some salt and black pepper. Add as much as required. Now in a separate container, add 1 tablespoon corn starch and 2 tablespoons water and mix thoroughly. Then put this mixture in your pan. Keep stirring until the sauce reaches your desired thickness. Once this happens, drizzle this delectable sauce over your previously fried fish.
